Let me tell you about this absolutely incredible, creamy, and easy coleslaw recipe that will rock your world!
I’m not exaggerating when I make the statement that this the the most amazing coleslaw I’ve ever tried!… in my entire 37 years of life. No joke!
I always thought my mother’s coleslaw growing up was the best. It really was something amazing, but I have to say, this easy coleslaw recipe is even better than my mother’s.
Aimee created this recipe in our kitchen and we finally took a moment to write it down! She’s a recipe genius!

The best mayo for the easy coleslaw recipe
For this particular recipe, I used Duke’s. They claim it has that “twang”. It’s just a very good and creamy mayonnaise. You can certainly use your preferred brand, but Duke’s mayonaise here really does a great job.
Duke’s mayonnaise is gluten free and their ingredient list is fairly short. I like a good simple ingredient list. Here is what you will find inside of Duke’s:
- Soybean oil
- Eggs
- Water
- Distilled and cider vinegar
- Salt
- Oleoresin paprika
- natural flavors
- calcium disodium

The coleslaw recipe dressing on another level
The vegetable you will use are very important in this recipe, but what makes an amazing coleslaw recipe is the dressing you use.
There is something about the coleslaw recipe dressing that I cannot explain. It is really not supposed to be this good! So rich and creamy!
This is one of those coleslaw recipes that when you see in in the fridge the next day, you get excited!
Sugar in coleslaw?
You will see we use coconut sugar instead of normal sugar. Yes there is sugar in coleslaw. We almost exclusively use coconut sugar because it’s so much healthier than regular sugar. Don’t worry, you can still use regular sugar here. It should still be a one for one swap.

Let it sit!
Forsome reason, the longer a coleslaw sits, the creamier it gets. Makes the easy coleslaw recipe the night before your meal and refrigerate over night.
It is still delicious right when you make it, but if you know anything about coleslaw, you know that 24 hours is that sweet spot!

Easy Coleslaw Recipe
Ingredients
- 1 head cabbage
- 1 large red onion
- 3 carrots
- 2 cup Mayo Duke's
- 1 tbsp yellow mustard
- 1/3 cup coconut sugar you can use regular sugar if you'd like
- 1.5 tbsp Apple Cider Vinegar you could use white vinegar
Instructions

Thinly slice head of cabbage and red onion

Grate the carrots

Combine carrots, cabbage and red onion into mixing bowl and mix

In a seperate container, mix remaining wet ingredients

Pour wet ingredients onto the vegtables and mix
