Why I Love this particular Gluten Free Pancake Recipe
There are two reasons I really enjoy these gluten free pancakes. The first reason is the fluff! I’ve seen many pancakes in my days and I’m always on the lookout for those thick fluffy pancakes. You know… those buttermilk pancakes that just release a cloud of steam when you cut into a stack of them. One of the things that I have noticed with other gluten free pancake recipes and even gluten free pancake mixes, they just lack that fluffy texture. They are sometimes gritty. These gluten free pancakes do not disappoint!
The other reason I love these gluten free pancakes is the cost effectiveness! I’m a dad and I like saving money! Who doesn’t?! Sure we could buy an expensive packed box of gluten free pancake mix, and there are some good brands out there, but putting together your own mix is way more affordable in the world of expensive gluten free box mix recipes.

As I noted above, there are some really good boxed pancake mixes that are available on the market. My go to gluten free pancake mixes that I typically keep in out cupboard for that quick weekend breakfasts are Josie’s Best and King Arthur brand. They both make a great pancake!

Fluffy Gluten Free Pancake Recipe
- 3 Eggs
- 1 1/4 cup Milk (Almond milk works too)
- 3 tbsp Sugar (We use coconut sugar)
- 3 tbsp Butter, melted
- 1 tsp Vanilla
- 3/4 tsp Salt
- 3 tsp Baking powder
- 1 1/4 cup Gluten Free flour (We used King Arthur, almond flour works too!)
Melt butter and set aside to cool.
Beat the eggs. Wisk them, beat the crap out of them! This step is critical to fluffiness!
Add milk, sugar, vanilla and butter to eggs and mix. Make sure the butter is not hot.
Add salt, baking powder, and flour. mix and your batter is complete!
Scoop out your desired amount of batter and cook on a skillet over medium heat in a well buttered pan.
Final step… devour your gluten free pancakes!
