Fluffy Gluten Free Pancake Recipe


  • 3 Eggs
  • 1 1/4 cup Milk (Almond milk works too)
  • 3 tbsp Sugar (We use coconut sugar)
  • 3 tbsp Butter, melted
  • 1 tsp Vanilla
  • 3/4 tsp Salt
  • 3 tsp Baking powder
  • 1 1/4 cup Gluten Free flour (We used King Arthur, almond flour works too!)


  1. Melt butter and set aside to cool.

  2. Beat the eggs. Wisk them, beat the crap out of them! This step is critical to fluffiness!

  3. Add milk, sugar, vanilla and butter to eggs and mix. Make sure the butter is not hot.

  4. Add salt, baking powder, and flour. mix and your batter is complete!

  5. Scoop out your desired amount of batter and cook on a skillet over medium heat in a well buttered pan.

  6. Final step... devour your gluten free pancakes!
